Q.What is tempering?
Tempering is the warming up of the ice cream to the ideal dispensing
temperature and to accurately hold the product at that temperature
until it is required for dispensing. If the ice cream is not correctly
tempered, then the ice cream dispenser automatically detects this
and will temporarily not
operate. Perfect tempering is achieved by placing the filled One-Shot containers
into
a tempering
cabinet, a unit that is different from a standard freezer.
Q.In what way are your tempering cabinets different
from a normal freezer?
A.Our cabinets have a circulating air system to ensure an evenness
of temperature throughout. This assists in keeping all the product
in the cabinet at the right temperature for serving.
Q.Does the ice-cream have a special formulation or
does any product work in the system?
A.Yes, a special formulation is required to allow the product
to be extruded over a 5°C range. Naturally we will be very
pleased to work with dairies to assist them with such formulations.
Q.Are the containers recyclable?
A.Yes, both the lids and cups are made from recyclable
plastic.
