Frozen ice cream can be turned into perfect soft-serve by using
the extrusion technique. Today that has now been developed into
a system that ensures total product integrity with the added benefits
of perfect portion and, ultimately, cost control.

The key to the system is the ‘smart’ single portion
container – smart because it does all the hard work allowing
the dispenser to be very simple. Years
of research have perfected this container that can be filled on
standard
lines at a licensed
One-Shot dairy under the strictest hygienic conditions. It is then
deep frozen and stored until required.
When
you have made your flavour choice from the tempering cabinet, the
protective pull-off tab is removed from the bottom of the container
exposing the star-shaped extrusion hole and the container inserted
into the dispenser. Here an automatic plunger applies pressure
to the lid of the container, which is designed to turn inside out,
and force the frozen product through the extrusion hole in the
base, leaving no waste, no sanitising of equipment – no problems.
The star-shaped extrusion hole has other benefits too – all
manner of frozen product can be served from ice cream to sorbet
and, for the first time, can include particulates such as chocolate
chips, nuts and fruit with no cross contamination with other flavours.
